Does the plugin’s functionality work via the API, and is there any API documentation available?

Yes it does work via the API as the bundle product is a normal product with relationships via a many-to-many table using the zeobv_product_bundle_connection definition. We don't have additional documentation yet, but you can refer to the API documentation via swagger provided by Shopware.
